In Ethiopia, coffee is more than a drink — it’s a ceremony. Beans are roasted over charcoal, hand-ground, boiled in a clay pot called a jebena, and shared slowly over hours. This ritual, passed through generations, inspired Coffee County to create a brand-new roast style: THE ETHIOPIAN ROAST.
On their 2020 visit to Kayokamino Estate, they experienced the ceremony firsthand — smoky, intense, yet somehow clean and fruit-forward even after multiple boils. The secret lay in the roast: high fire scorching the surface, locking in wild spice and earthy strength, while the inside stayed bright with Ethiopian fruitiness.
Coffee County re-imagined this on their PROBAT roaster in Kurume:
